Duquesne Club - Grand Award Winner
The Grand Award winner in the premium dining category, the Duquesne Club located in Pittsburgh, is a distinguished, 128-year-old, private-member-only institution that was founded by steel icons such as the Mellons, Carnegies and Fricks, and which numbers the leading CEOs, attorneys and judges in Pittsburgh among its members. With 13 floors occupying a full city block, it contains eight à la carte dining rooms, 40 guest rooms and 60 suites, which are leased from the club by corporate members. According to Mike Dawson, sales representative for TriMark SS Kemp, with the Duquesne Club having held the title as the top private club in the United States since 1996 as determined by Club Leaders Forum magazine, he felt that his company "had a very high image and reputation to uphold." Added to this task was the responsibility of upholding the reputation of its executive chef, Keith Coughenour, who has been the past captain and is currently the coach of the U.S. Culinary Olympic team. The project here involved updating the table service, which had been in use for the past 25 years.
Coughenour stressed that the club's former dinner- ware had become outdated and did not support his contemporary dinner presentations. He mentioned three criteria that he used in selecting the new china pattern: First, it had to provide a bigger face (well area) for his plating presentations; second, the body had to be as close to pure white as possible, so as not to compete with the food; and third, it had to be extremely strong with the heat retention qualities afforded by high alumina content to withstand not only a great deal of handling, but also regular transport to the 73 private dining rooms spread over 11 floors. Dusquene Club
For these reasons, a custom design by Steelite China was selected. The border color is a somewhat subdued moss-green tone with a place/set plate bordered in a custom dark-green color and bearing the Duquesne Club's logo. Complementing the china service is Reed & Barton's traditional Kings pattern flatware, and custom lead crystal from Lenox, also bearing the club's emblem. Other table accessories include custom-made linen by Harbor Linen of Ferguson Mills, glass butter plates by Isabel Lam, salt & pepper shakers by Anchor Hocking, creamers with club logo by Reed & Barton, and trivets and skillets by Straub of France.
Both Coughenour, as well as the specifiers for the Cascades Restaurant installation, singled out the efforts of John Miles of Steelite International for his extraordinary assistance in supplying numerous design suggestions, as well as fired samples to help them design just the tabletop they wanted.
